It is variation of pesto.basil pine nuts are used in pesto .here I used spinach and cashewnut .it tastes yum.

Instructions
Wash spinach and
blanch
it.
Add the cashews to food processor and pulse a few times until crumbled.
Add the spinach, coriander leaves ,lemon juice, salt, garlic,and pepper, and continue to pulse.
Add cheese and olive oil. Pulse one more time so that pesto mix well.
more lemon juice to taste if desired. Dip is ready.......
