It is variation of pesto.basil pine nuts are used in pesto .here I used spinach and cashewnut .it tastes yum.

Ingredients
- 2 tbsp Cashews
- 1 cup Spinach
- 1/2 bunch Coriander leaves
- 1/2 Lemon
- Olive oil as required
- 1/2 teaspoon Black pepper-
- 2-3 pod Garlic
- 1 tbsp Cheese grated
- Salt as per taste

Instructions
- Wash spinach and blanch it.
- Add the cashews to food processor and pulse a few times until crumbled.
- Add the spinach, coriander leaves ,lemon juice, salt, garlic,and pepper, and continue to pulse.
- Add cheese and olive oil. Pulse one more time so that pesto mix well.
- more lemon juice to taste if desired. Dip is ready.......
