It is variation of pesto.basil pine nuts are used in pesto .here I used spinach and cashewnut .it tastes yum.

  • 2 tbsp Cashews
  • 1 cup Spinach
  • 1/2 bunch Coriander
  • 1/2 Lemon
  • Olive Oil as required
  • 1/2 tsp Black pepper-
  • 2-3 pod Garlic
  • 1 tbsp Cheese grated
  • Salt as per taste


  • Wash spinach and blanch it.
  • Add the cashews to food processor and pulse a few times until crumbled.
  • Add the spinach, coriander leaves ,lemon juice, salt, garlic,and pepper, and continue to pulse.
  • Add cheese and olive oil. Pulse one more time so that pesto mix well.
  • more lemon juice to taste if desired. Dip is ready.......
