Lasuni karela
Bitter gourd (karela) is very good for diabetics. It has powerful antioxidant along with vitamin A and C which prevents premature anti aging. Even then some people avoid bitter gourd due to bitterness. Here is the recipe which I cooked with less oil and less ingredients. It has garlic flavour.
Boil bitter gourd, tomato, green chillies, garlic and onion. After then chop and keep separate the bitter gourd.
Then peel off tomato, garlic and onion. Make a paste with boiled tomato, garlic, onion and green chillies. Then add turmeric powder, cumin powder and coriander powder.
Now heat a pan add oil and saute the bitter gourd. Then add the boiled mixed paste and stir-fry. Let cook for a few minutes. Finally sprinkle with cottage cheese (chena).
Serve with rice, chapati or whatever you want. After boiling thy bitterness of karela will be reduced.
