Heat a wok. Dry roast mustard seeds and curry leaves. Once nice aroma comes out add peanuts & roast it. Now add all the vegetables,onion,tomatoes,ginger,chili along with some salt. Cook covered on a slow flame for 5-6 min.Stir in between.
The vegetables will cook in there own water.If the vermicelli is not pre roasted then roast it in a separate pan.Mix this roasted vermicelli with vegetables add a cup of water.Adjust salt. Add ground black pepper. Cook covered for 4-5 min.serve hot.
Notes
All vegetables will cook in their own water however if u see it sticking to the base of the wok add little water.
