Paal Payasam / Milk Pudding is the Classic dessert of Kerala and Tamilnadu. The mesmerizing taste and flavour of this paal payasam makes it a unique dessert. Traditionally it is made by boiling milk for a long time till it becomes creamy, thick and layered. It is a time consuming procedure. So, Now a days we make this using pressure cooker that gives the same taste and quality with simple steps..
Raw rice 3 tb spoonsI use usually Basmathi rice that gives extra flavour to the dessert
Full cream milk 1 litre
Sugar 250 gms
Saffron strings 4 or 5
Green cardamom pods 3
Chopped nuts roasted in ghee 1 tb spoon
Instructions
Wash the Rice once, filter the water out completely and give few turns in the blender.
Keep the pressure cooker on the stove.
Put the rice in it and pour 800 ml of milk in to it.
Add the saffron strings and cardamom pods too.
Stir well. Close it and wait till the steam gushes out forcibly. Put the weight and keep the flame to lowest or minimum. Carry on with other works for 40 minutes. Switch off the stove.
Remove the lid after the steam releases. Switch on the stove and keep in medium flame. Add the rest of 200 ml of milk. Let it to boil for 10 more minutes. Add the sugar and stir well. After five minutes switch off the stove and garnish with nuts.
