Mustard-3 tsp
Fenugreek-1 tsp
Turmeric Powder-1 tsp
Asafoetida-1 tsp
Salt
Sesame Oil-3 tbsp
Instructions
Wash and pat dry all the lemons.Cut into small pieces.Place it in a clean vessel along with the juices.
In a pan dry
roast
fenugreek seeds and red chillies.Powder them in a blender once cooled.
Add this powder to the cut lemon pieces.Also add salt and turmeric powder.Mix well.
In a small pan add sesame oil and heat.Add mustard seeds to splutter and then add asafoetida. Cool the mixture.
Pour in the temperings to the lemon mixture.Mix well.
Lemon Pickle is ready.Use it after 2-3 days for the proper soaking of the lemon in spices.Store in a clean ceramic pot,container or a bottle.
Notes
Always use sesame oil for better taste.
You can boil lemons in water and cut them into pieces and follow the same proceedure.In that case you can use them instantaneously.
Always use a clean container for storage.
Use a wodden spoon for taking out the pickle.
