Place dates in a glass bowl. Pour over the boiling water. Set aside for 15 minutes until soft.
Chop 1/2 of them very finely, puree rest of them.
Sift flours organic sugar and cinnamon powder in a large bowl. Add milk, butter, egg and date mixture.
Brush two small non-stick frying pans with a little of the extra melted butter. Heat over medium heat. Add 20 ml of mixture to each pan. Cook for 2 minutes, or until bubbles appear on the surface. Carefully turn over and cook for 1 minute.
Place prepared pancakes on a plate and wrap loosely in a clean tea towel to keep warm. Repeat with remaining batter, greasing pan between each batch.
For the Caramel sauce : Place cream, butter and organic coconut sugar in a small saucepan. Stir over low heat until butter melts. Increase heat and simmer for 10 minutes, until sauce thickens. Pour into a glass sauce pourer and set aside.
To serve, place pancakes on the serving plates and pour over caramel sauce.
Notes
You may even add Red dessert wine to the Caramel sauce to make it more flavorsome.
