Wash and soak the choles overnight. Next Morning, cook in pressure cooker with 3 cups water and salt for 4-5 whistles.
In a thick bottom pan add the oil and heat on.slow flame.
Add the jeera and the onion.
Cook till light pink.
Add the dry masalas and fry for 1 minute.
Add the tomato puree.
Cook till the mixture looks well fried.
Add the boiled choles and let simmer for about 20 minutes.
Adjust water consistency as per need.
Lastly garnish with coriander leaves and ginger Juliennes.
Serve hot with pooris with a dash of lemon juice and chopped onion on the side.
Seasoning can be adjusted as per personal.preference.
