Mix up the maida, sugar, ghee and cardamom powder with a very light hand.
The dough just needs to come together.
Can add a little more ghee if dough feels a little dry.
Preheat the oven at 180 degrees for 10 minutes.
Line a baking tray with parchment paper.
Make small balls and press lightly to flatten them.
Place on the tray.
With a sharp knife put a cross on each.
Bake for about 10-12 minutes till the base turns light brown.
Let stand in oven for 5 minutes.
Remove and cool on wire rack.
Store in air tight jar.
Place half cut cashews or almonds on top of each nankhatai before bakkng.
