Grease a baking pan and keep aside.
Place the peanut butter in a saucepan.
Melt peanut butter on low heat till fully melted.
Remove from heat and add honey.
Stir in muesli, cocoa powder and vanilla essence.
Transfer to a bowl and mix to form a dough.
With oiled hands, take one tablespoon of dough each and make small balls.
Flatten the balls to cookie shape and place on greased pan. Top with chocolate chips.
At this stage, for a no-bake version, you can choose to chill it a little and serve it.
For a baked version (which you can store in an airtight container over the counter), bake for about 6 to 8 minutes in a preheated oven (at 350 degrees Fahrenheit or 180 degrees Centigrade) to set the cookies.
Take it out of oven and gently press white chocolate chips over each cookie and serve when when cool.
Chocolate chips have been added only for decorative purposes.
Store unbaked cookies in the refrigerator and the baked ones in an airtight container on the counter.
