Healthy, Savory Muffins using a bunch of protein rich pulses/lentils.
Can easily be made as uttappams or pancakes too.
Toss in your favourite veggies to up the health-quotient.
Assorted vegetables like grated carrotchopped capsicum, tomatoes, green coriander leaves

Instructions
Wash and soak the rice and all dals, moong overnight.
Next morning, grind to a smooth paste
Add water to adjust consistency like idli batter.
Add salt, red chilli powder, green chilli and all vegetables.
For making muffins, preheat the oven to 180 degrees for 10 minutes.
Use , silicon moulds as it will be easy to de mould.
Add the baking soda and give a quick whisk.
Pour into cupcake moulds and bake for 12 to 15 minutes
Remove when done.
De mould after 5 minutes.
Serve hot with pudina- dhaniya chutney.
If making as uttappams, omit the baking soda.
Shallow fry on a non stick pan.
Cook both sides till golden brown.
