Who said that soup should be: 1. Hot 2. Spiced 3. Made with only vegetables/meat 4. Simmered with stock vegetable / meat 5. Cooked till thick.Thinking beyond the normal soup making, I opted for a soup with fruit. In the hot summers we crave cool recipes and cannot eat much of carbohydrates. For people like me, I am averse to anything hot. This soup was the successful implementation of merging simple summer fruits and juices into a medley so lovely that I could not have enough of this! I also made this recipe exclusively for adults using sweet wine for a Champagne party for one of my friends. As I did not attend the party I got rave reviews for the version and so am sharing the same here as well.
With a melon baller tool, scoop out the Melon and Watermelon Balls. Keep them in the refrigerator.
In a blender, combine the Grapes and Orange and Pineapple Juices. Blend till well amalgamated. Strain through a soup strainer.
Wash the blender jar well and pour the strained liquid into it again. Now add the honey, 2-3 Mint leaves and Saffron. Blend again.
Pour into Ramekins or soup bowls .Float the Melon and Watermelon Balls in the soup and top with more Mint leaves and Pomegranate Pearls. Serve chilled.
For the exotic version
Juice of 1 Grapefruit, 50 ml sweet wine (Used in place of Pineapple Juice), 100 gm Red Currants (Used in place of Grapes)
Blend everything and present the soup as before.
Notes
NOTE – Do not use Wine for parties where children are invited.
