Lamingtons are traditional Australian dessert, prepared from Small squares of white sponge cake that is dipped in a sweet chocolate frosting and then rolled in dried coconut. It very easy to prepare and tastes heavenly.
In this recipe, I have used chocolate cake and dipped in dark chocolate and milk mixture. Rolled in dried grated coconut.
In a bowl sift together flour, baking powder, baking soda, cocoa powder twice or thrice for any impurities. Keep aside.
In another bowl, mix oil, curd, vanilla essence, sugar. Whisk well until sugar dissolves and mixture becomes fluffy
Add all dry ingredients into wet mixture. Add Milk slowly at a time and Whisk to form a thick batter.
Grease baking pan with oil and flour. Pour the mixture in a greased pan. Smooth out and lightly tap the pan.
Bake cake for 25-30 minutes.
Insert a tooth pick. It should come out clean. Let the pan sit on counter for 5 minutes.
Flip cake and let it cool on wire rack.
Cover with cling wrap and refrigerate for at least 1 -2 hours or until firm.
Chop dark chocolate and melt it in a double boiler or microwave for 1 minute. If using microwave keep checking after every 10 seconds. Keep stirring after each cooking interval. Do this till chocolate melts completely.
Add milk and microwave for few seconds. Mix thoroughly.
Cut the cake into equal squares. Place parchment paper or waxed paper on a work surface, and set a wire rack on the paper.
Take shredded coconut into a shallow bowl. Using a fork, dip each square into the icing, coating all sides, then roll it in the coconut.
Place onto rack to dry. Continue until all lamingtons are coated.
