Mutton Ghee Roast is a very popular side dish of South India. It is a beautifully flavored dish cooked in ghee, freshly grounded masala and spices. The aroma and taste is amazing. A perfect side dish.
Grind together peppercorns, green chilli, ginger, garlic with little water to a fine paste.
Add the ground masala, lemon juice and salt to cleaned mutton pieces. Marinate it for 30 mins to 1 hour.
Take the pressure cooker and add the marinated mutton and 1 cup of water. Pressure cook for 10 mins. Let the pressure release by itself. Open the cooker and if there is any liquid, evaporate it completely.
Heat ghee in a pan. Add the whole spices, red chillies, curry leaves and saute for a min.
Add the sliced onions and cook till it turns soft. Add the tomato and saute till it turns mushy.
Add all the masala powders and salt if required and fry for a min.
Add the cooked mutton, stir and mix well coating the mutton with the masalas and roast on low heat for about 5 mins stirring frequently.
Increase the flame to medium-high heat and roast further stirring frequently for about 10 mins.
Add chopped coriander leaves, give a quick stir and take off the heat.
