Mushrooms along with few vegetables in fried rice gives a unique flavour. This mushroom fried rice is my daughter's choice in restaurants and i try to reproduce it for her even healthier and tastier by avoiding ajinomoto and using fresh vegetables . Here goes the method of mushroom fried rice
Soak long grained rice for 10 mins.Cook the rice into separate grains and let it cool.
Chop carrots into juliennes. Chop the white and green part of spring onions separately. Chop garlic and Green chillies into fine pieces. Wash and slice the mushrooms
In a wok add oil and when reaches smoking point add green chillies,garlic followed by carrot. Then add mushrooms and white part of spring onions and stir well in high flame.
Now add all the sauces,green peas and adequate salt.add the cooked rice and toss well. Add the pepper powder,stir well and switch off. Garnish with green part of spring onions. Serve hot with tomato sauce.
Notes
other vegetables can also be added based on your preference.the vegetables shouldn’t be cooked well and should be crunchy.
