This recipe is dedicated to my mom who is a great inspiration behind all the baking I do .She is an excellent Baker and I carried out those bakers genes in me from her though she used to bake a lot with eggs in 70s and 80s in those round ovens and sometimes in tandoor and sigadi's too and whatever cookies,cup cakes and dougnuts she used to do in those times people used to wonder ...she still has those cup cake molds ,cake tin ,cookie tray ,and that round oven...when she used to make doughnuts for us we used to sit around her watching how she used to use bottle covers and glasses and bowls to get those perfect round discs with holes which we used to put in our fingers and hang around eating with friends...while we were fast asleep in the afternoons she used to bake beautiful cakes for us...I still remember those days ...and for us it was no less than a magic...simply watching inside the oven seeing the cake rise and waiting for it to come out was worth the wait ...what fun ...the whole house used to be filled with that sweet baking aroma of vanilla which I used to love.
Now... following her footsteps I indulged more into healthy baking and eggless baking which my mum finds little difficult these days ..😊...but she loves my cakes as well and whenever she visits me or I visit her she specifically asks me to bake my Chocolate cake for her and for my brothers and their kids which I also love to do.
So this healthier version of my Chocolate cake is dedicated to my Baker Mom on this mother's day special occasion.
Mix all the wet ingredients together except vinegar/lime juice.
Sieve all the flours together along with b.powder/b.soda and add a pinch of salt too.
Now add all the dry ingredients to the wet and start stirring well so that they all get mixed up together.At this stage add a handful of sunflower seeds and CHOCOCHIPS to the batter and adjust consistency if required by adding more milk.
Add lime juice/ vinegar to the batter and pour in the lined tin or a silicone mold.Sprinkle a generous amount of sunflower seeds and chocochips on top and keep it for baking in the oven for about 30/40 mnts or till done.
Bake in a preheated oven at 180/200 .Once done take it out and keep it aside for cooling.
Once the cake is cooled down you can cut in desired shapes I cut them in nice big neat squares
The cake was nice ,soft spongy inside and not so very sweet but having all the goodness of the nutritious flours that I used along with super nuts and everyone's favorite chocolate.
