It's a good way to make kids eat carrots, coconut and oats all at once. They are healthy, tasty, filling and if you glaze them with your choice of dark/white chocolate or cream cheese glaze it will definitely make kids to have atleast one.
Beat sugar and butter in a large bowl until light and fluffy.
Add in eggs, one at a time and beat until incorporated.
Add in vanilla and mix well.
In a separate bowl whisk whole wheat flour, oats, cinnamon powder, nutmeg powder, baking soda and salt.
Add this dry mix to butter mixture and mix well.
Add in grated carrots and coconuts and mix well.
Scoop 1inch of this dough onto the pan. Place each ball atleast an inch apart.
Bake for 15 min. Base of the cookies would be golden brown when done.
I used melted dark chocolate to drizzle over the cooled off cookies. You can use white chocolate/cream cheese or any other glaze of your liking.
Notes
*You can replace eggs with 1/2 cup ripe banana. It will add a nice banana flavour. But it will make the cookies soft.*You can replace 1 cup brown sugar with 1/2 cup brown and 1/2 cup white sugar to balance the softness due to bananas.* You can also add 1/2 cup raisins or chocolate chips.
