long grained Basmati rice

canned/boiled chickpeas

medium sized red onion

teaspoon
ginger and garlic pastejio

cinnamon

petal of mace

peppercorns
A sprig of curry leaves

green chili
1
cup
thin coconut milk
1/2
teaspoon
Salt
2-3
teaspoon
neutral flavored cooking oil

tbsp
coconut bacon for the garnish
Instructions
Wash and soak the basmati rice for 30 mins.
Chop onion into thin and long strips. Finely mince the green chili.
Heat the oil in a pressure cooker.
Add the cloves, peppercorns, mace and cinnamon. Saute till fragrant.
Add chopped onion, chili and curry leaves.
Once the onions start to brown on the edges, add the chickpeas and drained basmati rice.
Add the coconut milk. Season with salt.
Close lid and cook for 10-12 minutes.
Allow steam to escape completely before opening the lid. Fluff up the grains with a fork.
Garnish with toasted coconut bacon.
Serve warm.
