large, peeled, boiled and mashed

mustard seeds

curry leaves
crushed

green chilies
finely chopped

coriander leaves
chopped

or as per taste

turmeric powder

Instructions
Heat oil in a pan, splutter mustard seeds, curry leaves when both stop spluttering.
Add green chillies and saute for 15seconds. Add salt and turmeric powder saute for 10 seconds.
Add mashed potatoes and mix really well. Finally add coriander leaves. When potatoes turn yellow in color. Switch off the flame.
Potato filling for dosa is ready to fill in dosa or serve with dosa.
Notes
You can also add 1 medium size chopped onion after spluttering mustard seeds and curry leaves (Step:1)
