Baking is always my passion and healthy baking is my preference. Who will not love crunchy, crispy and that too home baked cookies as an accompaniment for coffee or any hot beverages? I am sure these cookies are a delectable dessert too, when topped with vanilla or chocolate ice cream :)
Oats, Raisins & Choco chip cookies are baked using quick cooking oats, whole wheat flour, cane sugar, raisins and dark choco chips. They are not only very easy to bake but are healthier cookies as well.
Sieve whole wheat flour, baking powder, baking soda and salt together; set aside in a bowl.
Add oats and mix well.
In another mixing bowl, cream butter and sugar until light and fluffy.
Add curd, milk and vanilla extract.
Mix gently. (Do not over mix at this phase).
Add the dry ingredients and gently bring them together.(do not knead).
Prepare your baking tray and preheat oven at 160 c.
Finally add choco chips and raisins to the cookie dough and mix gently.
Design your cookies and place them on the baking tray leaving little gap, as these cookies tend to spread a little.
Bake for 13 to 15 mins or until the bottom of the cookies are slightly browned.
After few minutes, transfer them to the cooling rack and allow them to cool completely.
Notes
1. 1 teaspoon of sugar is optional. If you prefer cookies to be less sweeter, you can skip this.2. Oven temperature and timings vary from one oven to another, hence change the settings according to your oven.3. The cookies will be relatively soft when hot. Allow them to cool completely so that they turn crunchy.
