A lip smacking side dish made with Brinjals coated with the cream of Onion and fresh spices that is best suited to have with plain rice and Indian bread varieties. A very simple and easy to make side dish with less ingredients but very rich in taste.....
Wash the Brinjals well and wipe them to make dry.
Cut them into thin long pieces.
Heat a heavy bottomed pan or a non stick wok with oil.
Add the brinjals and fry them in medium flame till they become light brown.
While they get fried, in a mixie jar add the chopped onions, cumin seed and cashews and grind them to smooth paste without adding water.
Transfer the paste to the frying brinjals and stir.
Add the salt, chilli powder and turmeric powder and fry till the oil separates. Garnish with curry leaves.
The rich and creamy Brinjal fry is ready to serve now.
Note:
While making the onion paste few heads of garlic could be added to get more spicy stuff.
Adding cashews are optional. It gives a richer taste!!
