Ensure that the butter is softened to room temperature
Whisk the castor sugar and butter until soft and creamy
Add the vanilla essence and whisk again
Add the egg and whisk until everything blends well
Next fold in the flour little by little
Add the oats and stir well, until a soft doughy consistency is reached. Add the baking soda to 30ml boiling water - this needs to be added to the batter and whisked again.
Add some more flour until the butter starts to leave on your hands and then add the chocolate chips. At this point the consistency is such that you should be able to knead the dough with gentle force. This is how the dough would look after being cling wrapped and re frigerated for a min 20mis prior to rolling out into cookie shapes
Grease a baking tray and preheat the oven to 150 - 180 c for 10mins
Roll out the dough and garnish with some more chocolate chips and let it bake for 15 - 20mins on 150 - 180 C until you notice the sides are beginning to turn golden brown
Remove the tray from the oven and transfer the cookies on a wire rack and let them cool for a good 30 - 40mins
