Split green gram pandoli is very famous cuisine of Gujrat . It is very similar to idli but the way of making authentic green gram pandoli is a unique. Batter spoon on a muslin cloth that is tie over boiling water . I have used idli stand . Split green gram is very rich source of protein so it is very healthy for breakfast or brunch .
Soak split green gram in enough water for overnight. Drain and wash . Now take a grinder add split green gram , add 1tsp water and curd and blend it till smooth.
Add ginger green chilli paste and salt , mix well .
For the tempering heat oil in a pan add mustard seeds and cumin seeds .when the seeds starts crackle , turn off the gas . Pout this tempering on batter . Mix well
Just before steaming mix the fruit salt into the batter , pour lemon juice over it . When the bubbles form , mix gently .
Pour batter in idli moulds . Steam it for about 10- 15 minutes .
When done serve immidiately with the chutney or sause of your choice .
