One midsize Raw Papaya peeled from outside( to remove skin and and inside to remove seeds and inner skin.)
Cut into 1 inch wide strips and slice finely.Add slices in enough water to cover, add salt and put to boil.
Add a little water if required till doneWhen papaya is done, add sugar. Add the grated white ginger and raisins
Keep on mid-low flame to reduce it to half the volume.In about 15-20 mins the papaya will become transparent in color.
Add lemon juice and all dry spices.Keep on low flame for another 5-10mins.
The water should have a syrupy consistency. You can make it thin or thick as per preference.
Cool and serve!
