I usually prefer salads for dinner as it is light and full of nutrition. But salads are normally served chilled or at room temperature. In winters to eat something chilled is not ok rather its like having a kind of punishment, at least for me. I remember in my childhood I used to wait for winters so that I can get roasted potatoes or sweet potatoes to eat.
This salad is inspired by my childhood memories. I grilled baby potatoes with dill leaves which is full of nice aroma, coated with olive oil, garlic and mixed herbs, served with salad leaves, cucumber, onions and tomatoes which are full of fibres. Toss with lemon juice, lemon zest and honey and garnish with cottage cheese.... a complete meal ...
First of all, boil the baby potatoes but make sure it is 80% cooked only
Now press each baby potato slightly with a masher
In a bowl prepare a marination for baby potatoes add 2 tablespoon olive oil, crushed garlic, chopped dill leaves, chopped spring onions, crushed black pepper, mixed herbs and salt. Mix all the ingredients nicely
Now add baby potatoes in this marination and keep this aside for 20 min
Now take a grill pan and cook baby potato mixture on this till potatoes are golden brown from both sides
By the time potatoes are getting cooked take another bowl add iceberg, salad leaves, chopped cucumber, chopped onions and chopped tomatoes
For salad dressing take a bowl, add a tablespoon of olive oil, tablespoon of honey, lemon juice, lemon zest, salt, mixed herbs and chilly flakes and mix it nicely
Now add this dressing to the salad bowl and toss it well. By now baby potatoes are cooked, so add hot grilled potatoes with dill leaves to this salad bowl and toss altogether gently
Your salad is ready serve it warn in a bowl and garnish it with scrambled cottage cheese, spring onion greens and dill leaves......
