Preheat oven to 180°C.
In a bowl mix together flour, sugar, baking powder, salt and baking soda.
Add the curd, oil, milk and vanilla in the centre
Add the cashewnuts
Mix it to form a smooth batter.
Pour into cupcake moulds.
Decorate with a few cashewnuts on top.
Bake for 10-12 minutes or until a toothpick inserted comes out clean.
