Rice paper rolls is a Vietnamese dish. Many people think its messy and hard to make - that's such a wrong assumption. Any supermarket these days which has a Thai section - will have a rice paper roll bag for sure. So you don't have to hunt for one. I have used BBQ chicken strips for this recipe, you can also add in your own twist by making this dish with any left over dry chicken dish of your choice. That's how versatile this roll is. The flavours here are clean and minimal, as the dipping sauce does this trick. And yes its super healthy as this one uses only fish oil , has peanuts, a good doze of veggies with every bite and yes there is Chicken of course!!
In a large bowl, combine chicken, carrots, beans, bell peppers, crushed ground nuts, fish oil and mix well. This will be your filling.
Place 1 rice paper round in a medium bowl of lukewarm water for 15 seconds or until just soft. Place on a clean tea towel or paper towel.
Arrange 1/4 cup of the chicken mixture along the centre of rice paper round. Fold ends in and roll up firmly to enclose filling. Repeat with remaining rice paper rounds and filling.
Serve with sweet chilli sauce
Notes
Use 2 rice paper rolls per roll. One of the most common problems is that the rice paper tears quite easily, hence usage of 2 sheets helps as a binding agent that avoids tearing.
