Pasta is loved by kids. Especially pasta in white sauce. But I was always scared to try making it in white sauce for the simple reason that it has Maida (Refined Wheat flour) in it. Fortunately we have stopped bringing in Maida in our house from almost so many years and try to avoid as much as possible. When it comes to breads and cakes, I prefer wheat bread or multi grain bread. But a BIG NO to Maida. Making Healthy and easy recipe is my motto and I am very consciously working toward it. That's why I am also planning to now bake my own breads. I tried making the pasta sauce with wheat flour and you have to believe me that there was no difference in the white sauce. And I enjoyed it more because there was no guilt of feeding maida to my little princess who ate it all. Here is the recipe to make White Pasta Sauce in Wheat flour.
Cut all the Veggies (Bell pepper, Baby corn and Cabbage) and heat the wok, put Ghee ( I always use ghee when i make dishes for my growing daughter)
For health conscious people, please switch to olive oil and say no to butter. put the veggies.
Let the veggies cook for 3-4 minutes and not more otherwise they would loose their crunchiness.
Remove the veggies and in the same wok. Dry roast the Wheat flour and this is the secret for this healthy pasta sauce. Replace Maida and make healthier choice.
Once the Wheat flour is roasted and turns light brown add cold milk to it and keep it stirring so that it does not form lumps. Add Fresh Cream to it and continue to stir.
let it simmer for another 3 minutes and add oregano and chilli flakes. Add veggies and boiled pasta. finally add salt. Garnish it with oregano and chilli flakes.
