Simple vegan jackfruit curry is a great lunch option when it comes to comfort food. A healthy vegan diet doesn't mean that you need to miss all the taste and juiciness of the chicken and meat. Take jackfruit and make jackfruit and you will never look at them.
Place the jackfruit in a bowl. Use your fingers or a fork to pull the pieces apart into chunks. Set aside.
In a bowl mix curry powder, garam masala, coriander powder, turmeric, and paprika. Mix well add a little water and stir until becomes a thick paste. Keep aside.
In a large shallow saucepan, heat the olive oil over medium heat for a minute. Add the cumin seeds, mustard seeds, and fennel seeds. Stir and fry the seeds until they begin to pop and sputter.
Add quickly chopped ginger and garlic mix together add onion, saute the onion until translucent. If there is anything sticking to the bottom of the pan, drizzle water on the pan and scrap it all up.
Add the bell pepper and mix to combine. Add the spices paste and mix until fully combined. Allow to cook for another few minutes.
Add the jackfruit and mix until fully combined. Add vegetable stock and lime juice. if needed cover the pan and bring to boil. Reduce the heat if you want to thicker, you can add arrowroot powder but not necessary. Add salt and pepper to taste.
