The mirchi bada of Jodhpur, Rajasthan is famous, as the water in that region lends it a unique taste. It combines well with another Jodhpur speciality, mawa kachori, dipped in sugar syrup. So when you visit Jodhpur next don't forget to try Choudhary, or Surya ke namkeen. The spicy potato stuffing is the key ingredients here. A bite of piping hot Mirchi bada can tantalize your taste buds.
My no fail try to my native place Jodhpur recipe Mirchi bada.
First boiled peeled and grated potatoes, in a pan add 1 tsp oil when it's hot enough add hing, add chopped onion ans saute it. Switc off the flame. Add potatoes, all spices, salt, amchur powder, saunf powder and mix well add green chilli. Mix well
Let it keep aside. Now slit all green chillies and in hot water add green chillies for 2-3 minutes . Keep it out from water and keep it in strainer. So that all water comes out.
Add gram flour/ besan in a bowl add ajwain, salt, turmeric powder add water and make thick batter. Add pinch of baking soda. And mix well.
Heat oil in a kadhai or wok. Meanwhile stuffed all green chillies with potato stuffing. When oil is hot enough dip stuffed green chilli in batter.
Deep Fry these mirchi bada till golden in color from both sides in hot oil
Drain on an absorbent paper, serve piping hot with any Green chutney or sauce.
