Hard boiled eggs - 4
Avocado mash - 1/2 a cup
Mayonnaise - 1 - 2 tablespoon
White onion - 1 small finely chopped
Fresh red chilly - 1 - 2 depending on your spice needs
Salt
pepper, lemon
Instructions
Mash the avocado and mix the mayo with it
Cut the boiled eggs into two halves and remove the yolk.
Add the yolk, onion, chilly to the avocado mayo mixture
Mix these ingredients using a fork rather than a spoon as it will allow to retain some of the texture
Add some salt, pepper and lemon.
Fill the cavities of the boiled egg with this filling and serve
