Ambrosia salad recipe is the variation of fruit salads which originated in the United States of America. A fruit salad, fruit cups or fruit cocktail has a variety of fruits with a sauce base. Ambrosia recipe usually has sour cream, yoghurt or whipped cream as main ingredients with pineapple, oranges, freshly grated coconut and marshmallows added to the salad.
Top it with nuts and dry fruits, ambrosia fruit salad is a healthy and delicious snack or dessert which can be served chill to the kids. Castor or superfine sugaroptional - add according to sweetness of fruits
Fresh seasonal fruits to serve -
Persimmon - 1
Pomegranates Seeds - 1/2Cup
Mint leaves - 2 sprigs
Instructions
How to make creamy fruit salad - Chop the orange segments and strawberries into 1-inch cubes and add to a bowl.
In the same bowl add in all the remaining fruits - pineapple cubes, peach cubes, cherries or any other fruit of your choice but set aside a few to garnish. Make sure that all the fruits are cut to similar size.
Next add in the marshmallows, freshly grated coconut and toasted walnuts (to toast the walnuts, microwave them on high for 20 secs).
Now add in whipping cream that has been lightly beaten with a hand whisk till it forms soft peaks.
Next, add the sour yoghurt. Traditionally, sour cream is used but use of sour yoghurt is a healthier option. Keep the yogurt at the room tempertaure for 2 days to get sour yogurtotuside
Mix all the ingredients well. Check for sweetness and accordingly add in the required amount of sugar (optional) mix again.
Assemble the fruit salad - Take two glasses and layer the bottom with freshly chopped persimmon along with some pomegranate seeds.
Now add the prepared creamy fruit salad.Top with more persimmons and pomegranate seeds and few left pieces of pineapple, peach and cherry. Garnish with a few mint leaves.
Cool in the refrigerator for at least one hour before serving. Enjoy your chiiled, creamy Ambrosia dessert.
Notes
Traditionally this salad requires the addition of sour cream, however, replace this with two-day-old sour curd (yoghurt) since it is a healthier option.
You can also replace the whipped cream for Greek yoghurt, its nice, thick, low calorie and much healthier.
Canned fruits can be substituted with all fresh and seasonal fruits.
Honey or agave nectar can be used in place of sugar to add extra sweetness if required.
