Eggplant or Baingan Bhartha is a punjabi cuisine. It is a vegetarian dish that is prepared by mincing eggplant (baingan) that is grilled over direct fire or in microwave.
Wash the Baingan in water. Pat dry with kitchen towel. Apply some oil all over and keep it for roasting on an open gas stove flame. You can also grill the baingan or roast in the oven. Keep the baingan turning after 2 to 3 minutes on the flame.
Roast until completely cooked and tender. Check with knife. Once done. The knife should slid easily in baingan without any resistance. Remove it and immerse in a bowl of water till it cools down.
Peel the skin from the roasted baingans.
Chop the cooked baingan finely or you can even mash it.
In a Kadhai heat oil. Then add onions, ginger & garlic. Saute the onions till translucent. Add green chilies and saute for a minute.
Add the chopped tomatoes and mix it well. saute all till the oil starts separating from the mixture. Now add the red chilli powder., Garam Masala, turmeric powder Stir and mix well.
Add the chopped cooked baingan. Stir and mix all very well. Add salt. Stir and saute for some more 4 to 5 minutes more.
Finally garnish with coriander leaves. Serve Baingan Bharta with rotis or chapatis.
