Lemon rice is a popular preperation of rice & it is served by almost all South Indian restaurants. As the name suggests it has a tangy lemon flavour & requires very few ingredients.here is the recipe

Ingredients

Steamed Rice 2 cups
Peanuts 1tbsp
Black Mustard seeds 1 tsp
Green chilli slitted 2
Ginger finally chopped 1/4 tsp
Lemon zest from 1 lemon
Lemon juice 1 1/2 tbsp
Curry leaves 7-8
Kasuri Methi 1 tbsp
Oil 1 tbsp
Turmeric powder 1/4 tsp
Salt
Hing a pinch
Instructions
Heat a wok. Add oil. Once the oil is hot add mustard seeds& let it crackle
Now add ginger chili curry leaves & kasuri methi. Cook for 1 min
Add peanuts . Cook for 2-3 min. Add turmeric powder. Mix well
Now add rice . Mix well. Add lemon juice , lemon zest & salt
Mix well. Cook for 2 min & it's ready to serve.
Though it is good to eat alone but you can serve it with coconut chutney
Notes
For lemon rice rice grains must not be sticked together
It turns out very good with left over rice
You can add chana dal & split urad dal in tadka . My family likes it without dal so I Don’t use it
