Ghee Rice is a South Indian Style of aromatic rice prepare using ghee and basic spices. A perfect one pot meal which is delicious and easy to prepare.

Instructions
Wash and soak the rice for 15-20 mins and set aside.
Heat 4 tbsp of ghee in a heavy bottom pan, add Cashew nuts and fry till golden brown. Then fry raisins until it puffs up. Keep both aside.
Now add onion to the same ghee and fry till caramelized. It will take around 5-10 mins. Take out and keep it aside.
Add cardamom, cloves, cinnamon, curry leaves and bay leaf to the same pan and allow it to splutter.
Add the drained rice and salt to it and fry for 2-3 mins. Add 1.5 cup of hot water to it and allow it to boil.
When rice is done add the remaining ghee, caramalised onion, fried cashewnuts and raisins reserving some for garnish.
