Rajasthani Dahi or Chach ki Rabdi is a regular serve in every house hold of the rural areas of Rajasthan. Rabdi is a beverage that is made by using Dahi (curd) or Chach (Buttermilk) and Bajra. It is served HOT with your regular dinner during winters.In Summers they serve it with curd, in the next morning with a little Jeera Powder and Salt, it is none less then a regular Energy Drink.
mix buttermilk and bajra flour in a bowl & add salt to it. Mix well so that no lumps are left in the liquid.
Cover it with a lid and keep it on side for 1-2 hours. I usually make this mixture ahead of time in the mornings and cook for lunch time
Cook it in on the low flame with continuous stirring, preferably with a wooden ladle for about 15 minutes.
Add required water to the Rabdi as it turns thick.
We are perfectly ready with the Rajasthani Chach or Dahi ki Rabdi. Serve it HOT!!!
Try this with your regular Dinner or as a Dahi- Rabdi Mixture for the next morning Breakfast (Just add a little roasted jeera and Salt ,1 cup curd add)
Add 1 cup water
Mix all the ingredient and grind it in the mixture
Put it in the fridge for 2 hours and serve it cold.
