This is a South Indian dish . Where I have used eggplant that is green in color. By adding the garam masalas an coriander leaves paste it gives a good taste to the dish.
Soak basmati rice for about 2 hours. In a mixer grind coconut, coriander leaves,green chillies, mint leaves,elachi, cinnamon sticks lavang,saunf, onion grind into smooth paste
Then in a cooker add oil , fry the green paste keep stirring till oil comes out. Then add the green eggplant an fry nicely. Then add rice an water an salt an pressure cook it for 1 whistle
