Aloo Turiya Masala

Aloo turiya masala is a simple but truly homely recipe as it has minimal amount of spices and uses the ubiquitous potato and the less frequently used ridge gourd. It is a gravy based dish and can be had with rice or roti.

Ridge gourd -1
Potato - 3
Green chillies - 3
Garlic - 4 pods
Turmeric powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Salt
Oil - 4 tsp
Sugar - 1 tsp
Water as required
Green coriander - to garnish
Curry leaves - to garnish
Instructions
Peel the ridge gourd and potato and cut into medium sized cubes. Keep aside.
Heat oil in a kadai and add mustard seeds and cumin seeds.
Once they splutter, add green chillies, curry leaves and garlic. Saute for half a minute.
Now add the potato and ridge gourd cubes. Add the dry spices and mix well. Add salt to taste.
Now add 2 cups of water and let it cook covered for 15- 20 minutes on a medium flame. Stir in between and add water if required.
Once the potatoes are cooked, add sugar and keep on high flame for 2 minutes. Garnish with chopped coriander and serve with rice or phulkas.
Notes
Dont overcook the curry.
