Skip the extra calories and work of a traditional pie crust! Try out this delicious, low fat crust made with sliced potatoes and overloading with the goodness of veggies.
Put the sliced potatoes in a bowl and drizzle with olive oil, 1 teaspoon of salt, ¼ teaspoon of pepper, rosemary, garlic powder and cottage cheese and use your hands or a spoon to evenly coat the potato slices.
Grease the pie dish with butter and lay the potato slices in a pie dish starting from the middle and all over.
Grate half of mozzarella cheese over the potatoes and bake
this pie dish in a pre heated oven for 15 minutes on 160 degrees.
Add chopped veggies ,butter and milk to eggs and whip up a little.
Add salt, pepper and pour this eggs n veggies mixture over the potatoes.
Finally grate mozzarella cheese over it and bake on 150 degrees for 35 minutes.
