The sweetness of the banana with the bitter coffee is a heavenly combination. Banana coffee cake is a traditional simple cake you can whip up as soon as you think of it.
Sift the maida, baking powder, baking soda and salt together and keep aside.
Beat the sugar, butter and oil till fluffy.
Add eggs one by one and beat well for about 5-10 minutes. It should get mixed well and start forming air pockets.
Now add the banana, vanilla essence and powdered elaichi and mix.
Finally add the sifted flour mixture and mix completely without any lumps.
Grease a baking pan and dust with flour. Pour the cake mixture and bake in a preheated oven for 25 minutes at 180 degrees C. Reduce the temperature to 160 and bake for another 15 minutes.
Let the pan remain in the warm oven for another 10 minutes and then remove the cake on a wire rack to cool.
Cut into pieces and enjoy with a hot cup of coffee.
Notes
Powdered sugar gives better results than granulated sugar.The riper the banana, the better.
