Red Rice is loaded with nutrition and offers health benefits, unlike white rice which is polished and is deprived of bran, the fibrous layer of the rice. Karnataka, one of the Indian states produces various varieties of rice and one of the local variety is called as Rajmudi. This rice has a very interesting story. The Wadiyar (Royals) of Mysore district in Karnataka used to take Rajmudi rice as the tax if people were not able to pay in cash, because of its nutty texture and flavor.Its very simple, easy and quick to make this local variety. Let's see how to make Red Rajmudi Rice.
Rinse the rice approximately 4-5 times to get clear water. There can be some dust/mud particles, so one needs to be really careful about them.
Set the timer for the induction for 25 minutes at 1100 degree temperature.
Take 2 cups of water and let it boil. It will take approx 5 minutes at this temperature.
Add Rajmudi rice and reduce the temperature to 700 degree. Let it simmer for another 20 minutes.
Cover the lid and let it stand for another 5 minutes. Rajmudi rice is ready.
It is such a versatile rice, that it can be used to make any other South-Indian Flavored rice like Veg Pulav, Tamarind rice, Tomato rice or can be simply eaten plane with dal or shambar.
