Amaranth leaves: Amaranth leaves cleanse the blood toxins, improves digestion, strengthens heart muscles, it also lower the blood cholesterol. I generally make with moong Dal however as subzi I tried it for the first time as I saw on the Internet. It tastes yum. Eat with boiled rice as a side dish
Wash leaves and cut it roughly, soak tamarind in little water
Heat little oil, add red chili and jeera. Roast it. Add sesame seeds and roast. In the end add grated coconut and remove from fire.
Heat little oil add garlic and green chili. Fry for a minute. Add Amaranth leaves and sauté till leaves becomes soft.
Remove from fire and cool it. Grind all the roasted ingredients along with tamarind into coarse paste. Add salt, temper with curry leaves and mustard seeds.
