Aloo bhindi is a nutritious and tasty vegetable which goes very well with Gujarati style dal and rice or chapati. Adding a large bunch of chopped coriander or dhaniya gives it a fresh aroma and flavour.

Mustard seeds
Instructions
Heat oil in a kadai and add mustard seeds. Once they splutter, add the bhindi, tomato and potato.
Add turmeric powder, red chilli powder and salt. Cook covered on medium flame for 10 minutes.
Open the lid after 10 minutes and give a good stir. Again cook for 5 more minutes.
Once the veggies are cooked, add the gram flour and sugar and mix well.
Finally add the chopped coriander and turn off the stove. Serve hot.
