Vegetable oats khichdi is another healthy oats recipe made from vegetables, oats and mild spices. This khichdi is little different from the masala dal khichdi or moong dal khichdi which we make at home normally. But taste wise, both are equally delicious and nutritious. It can be prepared quickly and with minimum efforts and ideal for those who have to fix a quick meal. Vegetable oats khichdi is a wholesome meal in itself and can be had either during lunch or dinner time. You can make this khichdi even without adding spices, but here I have added little garam masala to make it more delicious and tasty. But you can skip adding it. Oats khichdi is very light on stomach and helps to soothe an upset stomach. It is healthy too because of all the vegetables added to it. Do give this healthy oats khichdi a try from the normal khichdi. I am sure both elders and kids would love this dish !!

Ingredients
- 1 cup Oats รข
- 1/2 cup Yellow Moong Dal รข
- 2 tbsp Desi Ghee or oil or oil รข
- 1/2 tsp Mustard Seeds รข
- 1/2 tsp Cumin Seeds or jeera or jeera รข
- 1 tsp Ginger Garlic Paste รข
- 2 Green Chillies chopped finely รข
- 10 leaves Curry รข
- 1 Onions chopped finely รข
- 1 Tomato chopped finely
- 1 Capsicum chopped finely รข
- 2 tbsp Beans optional avarekalu or hyacinth รข
- 1 tbsp Green Peas รข
- 1/4 tsp Turmeric Powder รข
- 1/2 tsp Coriander Powder รข
- 1/4 tsp Garam Masala รข
- 1-2 tsp Salt or as per taste

Instructions
- Wash and soak the moong dal with enough water for 15 to 20 minutes. Drain the water and keep it aside. Heat ghee/oil on a medium flame, in a small pressure cooker.
- Add mustard seeds and allow it to splutter. Once the seeds stop spluttering, add cumin seeds and saute till light brown. Add chopped green chillies, curry leaves and stir fry for a minute.
- Add ginger-garlic paste and chopped onions and cook till the onions become translucent and the raw smell of ginger-garlic goes away. Add chopped tomatoes and cook till the tomatoes become little soft.
- Add chopped capsicum, green peas, avarekalu (flat beans/hyacinth beans) and mix well. Add turmeric powder, red chilli powder, coriander powder and garam masala. Combine together.
- Add soaked moong dal, oats and salt. Saute all the ingredients for 2 minutes on low flame.
- Add 3 1/2 to 4 cups of water and stir well. Cover the pressure cooker with its lid and pressure cook on a medium flame, for upto 3 whistles.
- Once the pressure goes off and gets cooled down a bit, open the lid and add a teaspoon of ghee and mix well. Serve vegetable oats khichdi hot or warm garnished with ghee and accompanied with pickle or papad or as it is.
- NOTES/TIPS: If you want little less mushy, adjust water accordingly. I added 4 cups of water and it worked fine for me. Add your own choice of veggies like carrots, sprouts, green beans or cauliflower.
