Vegetable Idli Recipe is the perfect Indian breakfast. A nutritional idli mixed with vegetables. Add vegetables of your choice in the batter and serve this healthy breakfast to your family.

Ingredients
- Semolina - 1.5 cup
- Curd - 1 cup
- Chopped vegetables Carrots, Capsicum, onions - 2 cups
- Ginger garlic chopped or in paste form - 1/2 tsp
- Roasted Vermicelli - 1 tbsp
- Salt
- Eno packet - 1

Instructions
- Soak semolina in curd for 15-20 min. Add all vegetables, ginger garlic, vermicelli and salt. Mix well Add water to adjust the consistency.
- In the last add 1 sachet of eno for instant fermentation.
- Grease idli moulds with little oil and prepare the idlis in steamer or microwave.
- Vegetable idlis are ready. Serve coconut chutney and enjoy a healthy breakfast.
