Ingredients
- Maida - 1 cup+1 tbsp
- Salt
- Pepper- 4 tsp
- Mix vegetables- 2 cups
- Water- as req
- Pasta sauce- 1/2 cup
- Milk- 1 cup
- Butter -1 tbsp
- Cheese cheddar and mozzarella - 1 cup each
- Chilly flakes- 2 tbsp
- Oregano- 1 tbsp
- Basil- few leaves
- Parsley- 1 tbsp
- Garlic- 2 tbsp
- Oil- 3 tbsp

Instructions
- To make pasta dough, add salt to the maida. Mix well. Add water as req to form a dough. The dough should neither be too soft nor too stiff. Use a pasta machine or a rolling pin to roll out thin sheets and roast on a pan for 30 seconds on each side.
- To make the veg mix, add oil and saute garlic And onion till translucent. Add vegetables and cook. You can use vegetables like broccoli,mushrooms,baby corn, sweet corn, bell peppers, zucchini,cottage cheese and spring onion.
- Cook the vegetables till half done and add pasta sauce and herbs to season.
- To make the bachamel sauce, add butter and saute flour for 2 mins. Cook the roux on slow flame so that flour dosent burn. Add in milk and stir continously to prevent lumps. Season with salt and pepper.
- To assemble to lasagne, boil the pasta sheets and put one sheet at the bottom of the baking dish. Top with vegetable mix and cheese. Then put another layer of pasta sheet, vegetable mix and cheese.
- Repeat layers and pour white sauce on top of the last layer. Put more cheese and bake it in the oven at 180° for 45 mins.
