Veg batata tehri is an aromatic, spiced one pot rice & vegetable based dish from the uttar pradesh cuisine. Veg tehri is a medley of mixed veggies, rice and spices from the awadhi cuisine.

Ingredients
- 3 cups basmati rice
- 3 medium size potatoes cut into small pieces
- 1 &½ cup green peas
- 1 large carrot peeled washed and sliced
- 1 finely sliced onion
- 5 green chillies chopped
- 1 tablespoon Ginger garlic paste
- 1/2 teaspoon garam masala powder
- 1/3 teaspoon Turmeric Powder
- Whole Spices:-
- 2 bayleaf
- 2 inch cinnamon stick
- 10 nos black pepper corns
- 2 green cardamom
- 2 cloves
- Salt
- 1/4 cup oil

Instructions
- Heat oil in pressure cooker, add and crackle whole spices in heated oil.
- Add onion n saute for minute on high flame. Add ginger garlic paste in it n saute for 3minutes on low flame.
- Add green chillies, garam masala powder, turmeric powder n saute for minute on low flame.
- Add veggies (potatoes, green peas, carrot) cover the lid n cook it for 2minutes on low flame.
- Add rice and salt with required water. Cover the pressure cooker with lid and cook it on 3 whistles. Switch off the flame. Wait until air release from pressure cooker.
- Veg batata tehri is ready to serve. Serve this hot with curd, raita and papad
