About Two Minute Microwave Chocolate Chip And Nuts Cookies
Did you know that an occasional treat is not only good for the soul but for your body as well?, the caveat though is that you keep it occasional and maintain a small portion size, but how does one do that when the minimum batch of cookies you can make is six?. Well I have the perfect solution, when the good folks at Kalya Cocoa sent me a sample of their smooth, rich and fragrant cocoa powder a quick and easy to do recipe is what I wanted to nail a couple of tries later, these beauties were born!, now what if I told you that you could make two small cookies with all the goodies intact and that too in two minutes from start to finish. These lovelies are made in the microwave (solo, non convection microwave!) and do not taste either like a cookie shaped cake or like raw cookie dough, they turn out crunchy from the outside, chewy from the inside and satisfy your sweet craving completely. The secret lies in cooking them for a few seconds at a time so as to not burn them. Now no more guilt of overeating a yummy snack coz you only have to make two pieces, midnight cravings anyone?...

Ingredients
- 1 tbsp Cocoa Powder I used Kalya Brand
- 1 tbsp All purpose OR whole wheat flour
- 1 tbsp Jagerry Powdered OR Honey
- 1/2 tbsp Butter softened
- 1 pinch Salt
- 1 pinch Baking powder
- 1/2 tsp Chocolate chips or mixed chopped nuts
- 1 tbsp Milk

Instructions
- In a small bowl first whisk together all the dry ingredients, then add in the wet ingredients until all are well combined. Mix in the chocolate chips or nuts.
- A thick sticky dough will be formed. Carefully spoon this dough onto a small piece of parchment paper (DO NOT use foil) with a microwave safe dish under it.
- Now microwave on full power for 30 seconds, open the door, close it and microwave for another 15 seconds, open and close the door again and microwave for one last time for 5 to 10 seconds.
- You may need a few seconds more or less depending upon your microwaves power - mine is 800 watts.
- Allow to cool on the paper for 2 minutes, then carefully peel off the paper from below and devour with a hot cup of tea or indulge in a midnight snack. Enjoy!
