Tomato With Caramalized Onion Biryani

Though i have tried many types of rice varieties like Zeera rice,Kala chana rice,Tamarind rice and many more,but this is very simple and quick made dish.This biryani is spicy,tangy and full of aroma.You can have this rice without anything like curd or any pickle,because its having pungent fragrance which needs nothing to be in your plate.But i have tried this biryani with with dahi ki sabji and fried mirchis.
You can make this rice for kids tiffin also and they will be happy to see this yummy dish in their lunch boxes.
I have added some caramelized onions on the top and some fried peas also ,which is giving an additional taste and crisp in every bite.
A must try recipe as a main course which you can have it in lunch or dinner or you can also enjoy this with your evening tea.

Ingredients
- 4 to 5 medium sized Tomatoes. roughly chopped
- A bowl full of boiled rice.
- 1/2 a cup of green boiled peas.
- You can add paneer also i haven't added
- 1 tsp of chopped garlic.
- 1 tsp of chopped chopped ginger.
- 2 bay leaves
- 1 tsp of red chili paste.
- 2 tsp of tomato ketchup
- 1 tsp of cumin seeds.
- 1/4 tsp of turmeric powder.
- 2 tsp of coriander powder.
- 1 tsp of fresh lime juice. optional
- Green coriander leaves - for garnishing and flavor.
- Salt
- Oil for frying.
- For Caramelized onions - Thinly sliced onions - 1 medium sized

Instructions
- Take a wok ,heat it up and add 2 tbsp of oil. Add cumin seeds and bay leaves and let it crackle. Now add chopped garlic and ginger and saute it. Now take the tomatoes and add them in the wok.
- Now add red chili paste and tomato ketchup. Cook the tomatoes till they get soft and mushy. It will take 5 to 7 minutes. When you will find that all the moisture is gone means the tomatoes has started leaving oil,then its time to add all dry spices.
- Take Salt,turmeric powder,coriander powder and mix it well. Now add little water in it and stir for 2 to 3 minutes. After this add the main ingredient Rice in the wok and mix it gently,so that the rice should not break.
- Now take another wok add 1 tsp oil and add onions in it. Saute the onions till they turn golden brown in color. Now add boiled peas in it and fry them for another 1 to 2 minutes.
- Now in the ready rice mix these onions and peas and garnish it with coriander leaves . Lastly you can sprinkle some lime juice.
