Vegetable skins have lots of vitamin. But skins should be cleaned, spotless and soft. We should always try to consume organic vegetables but always it is not possible. This is an innovative recipe.

Ingredients
  

  • 1 bowl vegetables skin
  • 1 mashed potato
  • 2 tbsp coconut paste
  • 2 tbsp couscous
  • 2 teaspoon roasted gram flour
  • 2 teaspoon corn flour
  • 2 teaspoon pumpkin seeds
  • 5-6 green chillies
  • Coriander leaves
  • Oil for shallow fry
  • Salt

Instructions
 

  • Wash chop and boil the vegetable skins. Make a paste with adding boiled skins, green chillies, coriander leaves, couscous, grated coconut and pumpkin seeds.

  • Heat a pan add 1 tbsp oil, mixed paste and salt. Stir to make it dry. Add roasted gram and corn flour to bind the dough.

  • Take handful of dough and give the shape like tikki. Heat a frying pan add little oil then shallow fry the tikkis. Bake both sides evenly then serve.
